Crispy Sinigang Air Fryer Wings | A Filipino-Inspired Game Day Recipe

As a Filipina, I've made sure to incorporate Filipino food in our household and introduce childhood dishes to my Chinese-Japanese fiancé over the years. Along the way, he's discovered that one of his absolute favorites is sinigang. He LOVES sour soups, so whenever I make it, I try to go as sour as I possibly can.
When I got home from a two week trip dealing with a family emergency, I found out I'd been laid off from my job. Defeated, heartbroken, and frustrated, all I wanted was to be with my fiancé, cook, and eat comfort food. I came home with a lot of questions about life, purpose, and what came next, but in that moment, I just really needed to get creative and have some fun in the kitchen.
I was craving chicken wings and my fiancé had mentioned in passing that we hadn't had sinigang in a while. And with the Bay Area winter weather finally settling in (after that weird on-and-off heatwave stretch)–why not combine both cravings?
My future in-laws were kind enough to grab a bulk pack of wings from Costco. I picked up a packet of sinigang powder mix from my local Asian market and the rest of the ingredients were things I had in the pantry. After what felt like the longest two weeks of my life, it was nice not having to do a full-fledged grocery run.
Pro tip: When I first developed this recipe, I patted the wings dry and went straight to the air fryer. Since then, I've learned from making a spatchcocked Thanksgiving turkey that letting it sit uncovered in the fridge overnight makes the crispiest texture.

Directions
1. Pat the chicken wings dry. If you have time, leave them uncovered in the fridge overnight to dry out to create a crispy exterior.
2. In a bowl, combine the sinigang mix, salt, pepper, and granulated garlic. Lightly coat the wings with neutral oil, then toss with the seasoning mixture to evenly coat.
3. For the dredge, mix the flour, salt, pepper, cornstarch, baking powder, and sinigang mix. Toss the wings in the dredge mixture and shake off any excess.
4. Place wings skin-side up in the air fryer basket, making sure not to overcrowd. Spray the basket and the tops of the wings with cooking oil. Air fry at 350°F for 12 minutes.
5. Flip the wings, spray them with cooking spray, and air fry at 400°F for 3 minutes.
6. Flip one last time, add the halved cherry tomatoes to the basket (optional for garnish), and air fry at 400°F for 2 minutes, or until the wings reach an internal temperature of 165°F.
7. Let rest for 1-2 minutes outside air fryer. Top with green onions, squeeze some lime on top, and serve with the roasted cherry tomatoes on the side. Enjoy!

- Non-stick cooking spray
- 1 green onion, chopped
- Handful of cherry tomatoes, halved
Seasoning:
- 2 tbsp Mama Sita's Sinigang mix
- 1 tsp salt
- 1 tsp pepper
- ½ tbsp granulated garlic
- Neutral oil
- Limes (to taste)
Dredge:
- ½ cup all-purpose flour
- ½ tsp salt
- ½ tsp pepper
- ½ tbsp cornstarch
- 1 tsp baking powder
- ½ tbsp sinigang mix
